How Do I Know When My Artichokes Are Ready to Harvest?
Harvesting artichokes at exactly the right stage gives you the most tender, flavourful result. Harvest too early and the head is small with little edible flesh. Harvest too late — after the scales begin to open — and the flesh is tough, fibrous and bitter. The perfect window is when the head is fully sized but still tightly closed, with scales pressed together firmly and no gaps between them.
Size as the first signal
The terminal head on the main stem should reach 8–12 cm in diameter at harvest stage. Lateral heads on the secondary stems are naturally smaller — 5–8 cm — but the same principles apply. The head should feel heavy and solid for its size when you hold it in your hand. A head that feels light may have underdeveloped flesh or have started drying out before proper development.
Scale tightness
Squeeze the head gently between your hands — if the scales are tightly packed and resist compression with a firm, springy resistance, the head is ready. If the scales yield easily, compress without resistance, or if there are visible gaps between them with the inner purple florets starting to show, the head is past its best for eating. This scale-tightness test is the most reliable single indicator of harvest readiness.
Cutting technique
Cut the stem 2–3 cm below the base of the head — do not pull, which damages the stem and can disturb the lateral buds below. A sharp knife or secateurs makes a clean cut. Leave the cut stem attached to the head for handling — it protects the edible base during storage. Cook within 24 hours of cutting for best flavour, or store in the refrigerator in a damp cloth for up to 48 hours.
Harvesting laterals
After the terminal head is cut, lateral buds on the stem develop into heads. Harvest these individually as each reaches the right size — they mature in sequence rather than all at once, giving a two to three week succession of harvests from each main stem.
