Why Are My Beetroot Roots Not Swelling Up Properly?

Beetroot that has been in the ground for what seems like a long time but still shows only small, undeveloped roots when you pull a plant to check is either not yet at the expected size for the variety, growing under conditions that limit root development (close spacing, shade, or dry conditions), or — in the case of beetroot that has bolted — has diverted its resources into seed production rather than root fill. Understanding how long beetroot takes to develop and what conditions support root swell is the key to diagnosing this problem.

It may simply not be ready yet

Most beetroot varieties reach usable size (golf ball, 5 cm diameter) in 60–70 days from sowing in warm conditions. Full-sized roots (7–10 cm diameter) take 80–100 days. A mid-April sowing in a good year produces small usable roots by late June and full roots by late July. An early-May sowing produces usable roots by mid-July. If you are checking before these timelines, the roots may simply need more time. Gently scrape away a little soil to expose the top of the root — if it has clearly begun to swell and shows a round top, it is developing and needs more time.

Too close together

Overcrowding is the most common reason for persistently small beetroot. Plants that were not thinned to 10 cm spacing compete for resources and never develop full roots. Each plant needs adequate space for its root to expand without being constricted by neighbours. If the plants are clearly crowded, thin to the correct spacing immediately — the remaining plants will often start swelling visibly within two weeks of thinning as competition is reduced.

Drought stress during root fill

Root swell requires consistent moisture — the expanding root cells take up water as they enlarge. A sustained dry period during the July–August root-fill phase stops root expansion. Deep watering (to 25–30 cm, matching root depth) every five to seven days in dry weather maintains the moisture beetroot needs to fill its root. Mulching reduces moisture loss significantly and is worth doing around beetroot.
