How Do I Grow Chestnut Mushrooms at Home?

Chestnut mushrooms (Pholiota adiposa) are a brown-capped, clustered variety with a richer, earthier flavour than the white button mushroom they visually resemble. They are increasingly popular in home cultivation for their strong taste, excellent cooking quality, and manageable growing requirements. If you can grow oyster mushrooms, chestnut mushrooms are a natural next step.

Substrate Options for Chestnut Mushrooms

Chestnut mushrooms grow on hardwood material and perform well on a substrate of hardwood sawdust supplemented with wheat bran or rice bran. A common mix is 85 percent hardwood sawdust, 10 percent wheat bran, and 5 percent gypsum, with water added to reach 60 to 65 percent moisture. This substrate needs to be sterilised before inoculation, as chestnut mushrooms colonise more slowly than oysters and are susceptible to contamination from competing moulds on unsterilised substrate.

Colonisation Conditions

After inoculation, store bags at 20 to 24 °C in a dark location. Chestnut mushrooms colonise in four to six weeks, somewhat slower than oyster mushrooms but faster than shiitake. During this phase, avoid disturbing the bags unnecessarily and check for signs of contamination such as green, black, or pink patches that would indicate mould. Healthy mycelium is bright white and grows in a consistent pattern from the inoculation points outward.

Fruiting Conditions and Pinning

Move colonised blocks to a fruiting area with temperatures between 14 and 20 °C, high humidity at 85 to 90 percent, and regular fresh air exchange. Unlike oyster mushrooms, chestnut mushrooms form dense clusters of individually capped mushrooms rather than shelf-like formations. Pins emerge from a centralised point on the block and develop into tight bunches. Avoid water stress during pinning as this can cause aborted pins. Adequate fresh air is essential to prevent stems from elongating excessively.

Harvesting Chestnut Mushrooms

Harvest when caps are still closed or just beginning to open. The characteristic golden-brown colouring deepens as they mature. Grip the entire cluster at the base and twist to remove cleanly from the block. Chestnut mushrooms store well in the refrigerator for five to seven days and hold their texture better during cooking than button mushrooms. A healthy block typically produces two to three substantial flushes. Between flushes, rest the block in cooler conditions and maintain humidity.
