How Do I Stop My Harvested Radishes Going Soft and Rubbery?

A freshly pulled radish is crisp, firm and snappy. Left on the counter at room temperature for a day, it has already begun to lose moisture and soften. After two to three days at room temperature, radishes are often completely rubbery and unpleasant to eat. The problem is almost entirely one of moisture loss after harvest, and it is entirely preventable with the right storage approach.

The moisture loss problem

Radish roots are around 95% water. After harvest, the root continues to transpire — losing water through the skin surface — but can no longer replace that water from the soil. In warm, dry air the moisture loss is rapid. In a cold, humid environment it is very slow. The entire goal of radish storage is to slow moisture loss while preventing the conditions that cause rot.

Refrigerator storage — the best method

Radishes stored in a plastic bag or sealed container in the vegetable drawer of a refrigerator (4°C, high humidity) stay crisp for ten to fourteen days. The key steps are: remove and discard the leaves before storing (the leaves continue to draw moisture from the root — cutting them off immediately after harvest dramatically extends storage life), leave the roots unwashed until use (moisture on the skin surface encourages rot in storage), and place in a perforated plastic bag or a sealed container with a slightly damp paper towel inside to maintain humidity around the roots.

Reviving soft radishes

Radishes that have softened slightly but not rotted can often be revived by submerging them in very cold water for thirty to sixty minutes. The roots reabsorb water through the skin and firm up noticeably. This only works for mildly soft radishes — very rubbery ones are past recovery.

Leaving in the ground

In cool weather, radishes can be left in the ground for a few extra days past peak without significantly deteriorating — the soil acts as a natural cold, humid store. In warm weather this quickly leads to pithy, bolted roots. Check daily once they reach size and harvest before the window closes.
