When Are My Strawberries Ready to Pick?

Knowing exactly when to pick strawberries — not too early (when they are still hard and tasteless) and not too late (when they are soft, splitting, and being eaten by slugs or wasps) — is the skill that separates a disappointing harvest from a brilliant one. Strawberries do not continue ripening once picked, unlike some other fruits, so picking too early gives you fruit that will never develop full sweetness regardless of how long you leave it at room temperature.

The signs of a ripe strawberry

A ready-to-pick strawberry is uniformly deep red all over — there should be no white, green, or pale area at the tip or around the calyx. The shoulders (the area around the stalk) may remain slightly paler than the tip in some varieties, but the tip itself must be fully red. The berry gives slightly to gentle pressure — not hard and firm (underripe) and not soft and collapsing (overripe). The stalk should detach cleanly from the truss with a slight twist and pull rather than requiring force. A ripe fruit pulled correctly should come off with the calyx attached and a short section of stem.

How often to pick

Pick every two days during peak season. In warm weather, strawberries that were red-tipped on Monday can be fully ripe and heading toward overripe by Thursday. More frequent picking — every one to two days in hot weather — prevents fruits from passing their peak and reduces slug and wasp damage, since it removes the primary target. It also encourages the plant to direct energy toward developing the next fruits in the truss rather than maintaining overripe ones.

When to pick slightly early

Pick just before full peak ripeness if: there is a frost forecast; heavy rain is predicted (which splits ripe berries and promotes botrytis); slug damage has already begun on that cluster; or you will not be able to pick for several days. A berry at 90% ripeness will still be far superior to shop fruit and will not improve if left on the plant in wet conditions.
